Eggplant lasagna

Ingredients (four servings):
- 200g lasagna pasta
- 500g diced eggplant
- 200g cherry tomatoes
- 150g buffalo mozzarella
- 100g Genovese pesto
- 1 clove of garlic
- 1 tablespoon extra virgin olive oil
- 60g grated Parmesan cheese
- 800ml of milk
- 60g cornstarch
- salt and nutmeg
- In a pan, mix milk and cornstarch well and cook over medium heat, stirring constantly.
- After boiling, cook for five minutes, season with salt, nutmeg and set aside.
- Heat a dash of olive oil in a non-stick pan, brown the garlic, add the eggplant and sauté for a few minutes. Set aside.
- Cut the tomatoes into four parts and the buffalo mozzarella into medium cubes.
- Grease a baking dish with olive oil, add a layer of bechamel, a small portion of eggplant, cover with a layer of lasagna, a little more bechamel, eggplant, tomatoes, Mozzarella and pesto.
- Repeat the process until you have five layers, finishing with grated Parmesan.
- Bake in a preheated oven at 180ºC for 20 minutes, covering with aluminum foil for the first 10 minutes.
- Let it rest for five to ten minutes before serving.

The third branch of O Xiss has opened, now in the Iguatemi Shopping Mall - the others are on Rua Padre Chagas and Cais Embarcadero.
