Grilled salmon with carrot puree

- 200g salmon steak
- salt, pepper and olive oil
- 50g white sesame seeds
- 50g black sesame seeds
- 250g chopped carrots
- 20g of flaked ginger
- rosemary, sage, parsley, thyme and basil
- 1 clove of garlic
- 200ml whole milk
- Season salmon with salt, pepper, olive oil and coat in sesame seeds to coat.
- Bake in the oven at 180°C for five minutes, sealing on all sides. Set aside.
- Cook the carrot and ginger until the portion is reduced by half and transfer to a blender.
- Add milk, garlic, rosemary, sage, parsley, thyme and basil and blend until a creamy puree forms.
- Leave in a low oven for five minutes and serve with the salmon.
For our part, Holy Week will be in São Paulo, enjoying restaurants, theater and a Brazilian Championship game. But whoever heads to Garopaba, certainly the main destination for gauchos in Santa Catarina, will be able to repeat some of the experiences we had there during the summer.
A regular visit to Setenta e Sete, where Dona Neusa, a Gaucho cook from Esteio, reigns supreme, provided us with a robust and delicious Mediterranean conger eel fillet (R$250.00, for a double portion).
Another recommendation, especially at the end of a sunny afternoon, is Casa do Padre. It is located at the top of the hill of the Igreja Matriz, near the Vigia. It offers a relaxing view, beers, cocktails, clericot and individual pizzas - try the one with mushrooms, mozzarella and gorgonzola.
On the border between Garopaba and Siriú beach, there is a lovely place: Chocolate Garopaba. Homemade snacks, pies and chocolates, served amidst the trees, a real treat. The passion fruit and walnut pie (R$16.50 per slice) is delicious; the açaí is unbeatable.
I've already mentioned Tasca dos Açores - enjoy the delicious shrimp pastries (R$45.00), but forget about the codfish à Lúcio Gomes.
And finally, the best summer ice cream, available all year round: on the main street, there's Bering Gelateria, a success in its first year. Order a cone with any two flavors - there are dozens - don't miss out!
- What immediately strikes you about the Chardonnay aged for five months in French oak, from the highly acclaimed 2020 vintage, from the Essencial line, is the elegance of the label. This is a wine produced by Courmayuer, from Garibaldi, a winery best known for its sparkling wines, with a store and bistro in Vale dos Vinhedos.
- Miolo Wild is a Gamay Nouveau, made with grapes from Campanha Meridional, which provides a sample of the potential of the 2022 harvest. Without added sulfites, recommended consumption between 10 and 12 degrees.
- How can you not be intrigued when you receive a box simply labeled "Brazilian Wine"? Upon opening, you'll be surprised: sparkling wines from two renowned wineries, partnered by Uvibra in the promotion. A brut Ouro from the century-old Salton and a nature rosé Sur Lie from Valduga, the latter with 30 months in the cellar without disgorgement - which, in theory, brings it to its full potential when the bottle is uncorked.
